Palms to Pines Triple IPA is an intensely complex, full bodied West Coast style Triple India Pale Ale. Triple IPA’s are not currently recognized as a beer style quite yet. However, in our opinion our Triple IPA differs slightly from our Double/Imperial IPA’s. This offering is stronger, drier and tends to have more supercharged aromatics than our Imperial IPA’s and Double IPA’s.

Palms to Pines Triple IPA is named after the historic California State Route 74 or as it is affectionately known the Pines to Palms Scenic Byway. We felt that a seasonal release was in order to commemorate the topography changes when driving on this epic route. As you transition you can watch the change from desert floor to Idyllwild pine forest.

Palms to Pines Triple IPA will be made with a beefy base of Two-row Pale malt, British Carastan and light crystal malts. To back up this hefty malt backbone, we throw hops in the mash, many additions are also added to the boil kettle, as well as additions to the Whirlpool kettle and hop back, a total of 7 hop additions at a ridiculous 6 pounds of hops per barrel.

Only American hops are employed in Pines to Palms: Warrior, Chinook, Summit, Cascade, Nugget, and Centennial. To tie into the pines in Pines to Palms Triple IPA, we added freshly picked Spruce tips from the mountains of Idyllwild and for the palms we employed the addition of an adjunct palm sugar. The Spruce tips provide a pineiness and subtle sweetness, while the palm sugar raises the alcohol content and aids in providing additional sweetness and a dry finish. This beer is then dry hopped with Centennial and Columbus hops for added hop aroma.
