Cassis Noir is an American wild ale brewed with spelt malt and unmalted wheat then aged for 29 months in Chardonnay barrels with a substantial addition of black currant. It is a “tip of the cap” to the traditional Belgian cassis (black currant) lambic. Wild yeast and bacteria add a sour tinge while the currants add an intensely jammy flavor with notes of roses and carnations as well as the oak and vinous flavors contributed from the chardonnay barrels. Ready to be enjoyed on its own or try with a nicoise salad, vanilla bean ice cream, or a rich chocolate cake.
